It Started with a Lark

In 1989, Hobart land surveyor Bill Lark took a fishing trip with his father in law, Max, in Tasmania’s Central Highlands. When Max pulled out a bottle of single malt whisky, Bill found himself asking a simple question that would change everything: why wasn’t anyone making malt whisky in Tasmania?

Three years later, Bill and his wife, Lyn, answered that question by launching Lark Distillery. It became the first whisky distillery to operate in Tasmania in more than a century and a half, after spirit distilling had been shut down under Governor John Franklin. What began as a passion project soon sparked a revival.


A significant part of Lark’s success came from the way Bill and Lyn built their brand. They focused on uncompromising quality, complete honesty about their craft, and a deep connection to local ingredients and Tasmanian identity. Long before the global whisky boom arrived, Lark stood apart, cultivating a loyal community of supporters who championed the brand as it grew.


Often described as the patriarch of the Tasmanian whisky industry, Bill sold Lark Distillery in 2013 and has since played a pivotal role in mentoring and supporting many of the distilleries that now define Tasmania’s world-class whisky reputation. At the heart of that story is family. Bill’s children have also continued the tradition, carrying forward the values, skills, and pioneering spirit that shaped the Lark name and reinforced whisky making as a true family craft.


In this session, Bill Lark shares how a family-led passion project grew into an industry-defining business. He reflects on building a brand grounded in trust and place, navigating legacy and succession within a family enterprise, and the role of generosity and mentorship in strengthening both the business and the wider family business community.

About Bill Lark

William David Blake Lark AM, widely known as Bill Lark, is recognised as the “godfather” of the Australian whisky industry.


Together with his wife Lyn, Bill established Lark Distillery in May 1992. The distillery was granted the first Tasmanian distilling licence issued since 1839, helping to spark the revival of whisky distilling in Tasmania and across Australia.


Bill was a founding member of both the Australian Distillers Association and the Tasmanian Whisky Producers Association. His leadership and advocacy have played a key role in the development of Australia’s modern craft distilling industry.


In 2013, Bill was named the “Minister’s Champion” at the Tasmanian Tourism Awards. In 2014, Lark Distillery was awarded Telstra Tasmanian Small Business of the Year and subsequently Telstra Australian Small Business of the Year. In 2015, Bill received the Hospitality Minister’s Award for Excellence for “Contribution to the Industry”.

In March 2015, Bill was inducted as the 28th member of the World Whisky Awards Hall of Fame in the United Kingdom, becoming the first Australian to receive this honour.


Bill has also been instrumental in the establishment of other distilleries. In 2008 he was a founding director of Victoria Valley Distillery, now known as Starward Distillery. In 2012 he co-founded Redlands Distillery in Tasmania’s Derwent Valley, now known as Old Kempton Distillery.


He has served as a judge at several Australian spirits competitions and in February 2019 was appointed Head Judge for the inaugural Australian Gin Awards and Head Judge for the Tasting Australia Spirit Awards in South Australia. He currently serves as Head Judge of the Perth Royal Distillery Awards.


Bill has consulted to distilleries across Australia, as well as in New Zealand and the United Kingdom, sharing his experience and helping shape the international reputation of Australian whisky.


In 2021, Bill became the inaugural inductee into the Australian Whisky Hall of Fame. In 2022 he was inducted into the Australian Distillers Association Hall of Fame, and he and Lyn were granted Life Membership of the Tasmanian Whisky & Spirits Association.


On 26 January 2026, Bill was appointed a Member of the Order of Australia (AM) in the Australia Day Honours List for his services to the distilling industry.
